I took a much-needed diversion from fancy wedding cakes to make these cuties for a dear friend earlier this week. They are having a Mad-Hatter-style tea party for their 1-year-old daughter's birthday and needed some sweet mice to round out the offerings. The cakepops are yummy deep dark chocolate cake truffles, dipped in tinted Callebaut chocolate with chocolate tails and ears. Pink pearl noses and tiny piped chocolate eyes finish the faces. I think that they are cute enough to be eaten.....Hurry before they scamper away! Happy Birthday to a darling little girl!
